Ingredients

  • 1 bunch asparagus, trimmed
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • Juice of 1/2 lemon
  • 1 tsp lemon zest
  • Salt to taste
  • Black pepper to taste
  • 1 tbsp grated parmesan cheese (optional)


Instructions

  1. Preheat oven to 200°C (400°F).
  2. Place asparagus on a baking sheet.
  3. Drizzle with olive oil and sprinkle with garlic, salt, and pepper. Toss to coat.
  4. Spread in a single layer.
  5. Roast for 12-15 minutes until tender and slightly crisp.
  6. Remove from oven and drizzle with lemon juice and sprinkle lemon zest.
  7. Top with parmesan cheese if desired.
  8. Serve warm.

  • Do not overcook to keep asparagus crisp.
  • Thicker stalks may need extra cooking time.
