Description

Sweet roasted carrots paired with creamy whipped ricotta and finished with a drizzle of spicy hot honey for a perfectly balanced savory-sweet side dish.


Ingredients

  • 500 g carrots, peeled and halved lengthwise
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp honey
  • 250 g ricotta cheese
  • 1 tbsp olive oil (for ricotta)
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 2 tbsp hot honey
  • 1 tbsp fresh thyme or parsley, chopped
  • Optional: chili flakes for extra heat


Instructions

  1. Preheat oven to 200°C (400°F).
  2. Toss carrots with olive oil, salt, pepper, and honey.
  3. Spread carrots on a baking sheet in a single layer.
  4. Roast for 25–30 minutes, turning once, until tender and caramelized.
  5. While carrots roast, whip ricotta with olive oil, lemon zest, and lemon juice until smooth and creamy.
  6. Spread whipped ricotta onto a serving platter.
  7. Arrange roasted carrots on top of the ricotta.
  8. Drizzle with hot honey and sprinkle with fresh herbs and chili flakes if desired.
  9. Serve warm or at room temperature.

Notes

  • Use whole milk ricotta for best texture.
  • Can be served as a side dish or light appetizer.
