Juicy oven-roasted chicken breasts stuffed with sweet roasted red peppers, fresh spinach, and melted mozzarella cheese for a flavorful and elegant main dish.
Ingredients
- 4 boneless skinless chicken breasts
- 1 cup roasted red peppers, sliced
- 1 1/2 cups fresh spinach
- 1 1/2 cups shredded mozzarella cheese
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and black pepper to taste
- Toothpicks or kitchen twine
Instructions
- Preheat the oven to 190°C (375°F).
- Cut a deep pocket into each chicken breast, being careful not to cut all the way through.
- Season chicken breasts inside and out with salt, black pepper, Italian seasoning, and paprika.
- Stuff each chicken breast with roasted red peppers, spinach, and mozzarella cheese.
- Secure openings with toothpicks or kitchen twine.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear stuffed chicken breasts for 2–3 minutes per side until lightly golden.
- Add minced garlic to the skillet and sauté for 30 seconds.
- Transfer the skillet to the oven and bake for 18–22 minutes until chicken is fully cooked.
- Remove toothpicks, rest for 5 minutes, and serve warm.
Notes
- Do not overstuff to prevent filling from leaking.
- Use fresh mozzarella for extra creaminess.
- Serve with roasted vegetables or a light salad.
