Description
Tender oven-roasted sweet potatoes coated in a rich maple glaze, perfect as a simple side dish.
Ingredients
- 2 large sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 3 tbsp maple syrup
- 1 tbsp melted butter (or oil for vegan)
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
- Toss the sweet potato cubes with olive oil, salt, and pepper.
- Spread evenly on the baking sheet and roast for 20 minutes.
- In a small bowl, whisk together maple syrup, melted butter, and cinnamon.
- Remove the sweet potatoes from the oven, drizzle with the maple glaze, and toss to coat.
- Return to the oven and roast for another 10–15 minutes until caramelized and tender.
Notes
- Substitute butter with extra olive oil to make the dish vegan.
- Add a pinch of cayenne for a spicy kick.
- Cut sweet potatoes evenly for consistent roasting.
