Tender oven-roasted sweet potatoes coated in a rich maple glaze, perfect as a simple side dish.


Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 3 tbsp maple syrup
  • 1 tbsp melted butter (or oil for vegan)
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/8 tsp black pepper


Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
  2. Toss the sweet potato cubes with olive oil, salt, and pepper.
  3. Spread evenly on the baking sheet and roast for 20 minutes.
  4. In a small bowl, whisk together maple syrup, melted butter, and cinnamon.
  5. Remove the sweet potatoes from the oven, drizzle with the maple glaze, and toss to coat.
  6. Return to the oven and roast for another 10–15 minutes until caramelized and tender.
