Description
Simple roasted sweet potato rounds topped with honey, feta, and herbs for a sweet–savory appetizer or side dish.
Ingredients
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 tbsp honey
- 1/2 cup crumbled feta cheese
- 1 tbsp fresh chopped parsley (optional)
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Arrange the sweet potato rounds on the baking sheet and brush both sides with olive oil. Season with salt and pepper.
- Roast for 20–25 minutes, flipping halfway through, until tender and lightly browned.
- Remove from the oven and drizzle the rounds with honey.
- Top with crumbled feta cheese and sprinkle with parsley before serving.
Notes
- Add crushed red pepper flakes for heat.
- Swap feta for goat cheese if preferred.
- These are best served warm but can be reheated.
