Description

Simple roasted sweet potato rounds topped with honey, feta, and herbs for a sweet–savory appetizer or side dish.


Ingredients

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp honey
  • 1/2 cup crumbled feta cheese
  • 1 tbsp fresh chopped parsley (optional)


Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Arrange the sweet potato rounds on the baking sheet and brush both sides with olive oil. Season with salt and pepper.
  3. Roast for 20–25 minutes, flipping halfway through, until tender and lightly browned.
  4. Remove from the oven and drizzle the rounds with honey.
  5. Top with crumbled feta cheese and sprinkle with parsley before serving.

Notes

  • Add crushed red pepper flakes for heat.
  • Swap feta for goat cheese if preferred.
  • These are best served warm but can be reheated.
