Description

Spanish churro pancakes are fluffy pancakes coated in cinnamon sugar and drizzled with syrup or chocolate, inspired by the classic churro flavor.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon
  • Butter or oil for cooking
  • Maple syrup or chocolate sauce for serving


Instructions

  1. In a bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, mix milk, egg, melted butter, and vanilla extract.
  3. Combine wet and dry ingredients and stir until just mixed.
  4. Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
  5. Pour batter onto the skillet to form pancakes.
  6. Cook until bubbles form on the surface, then flip and cook until golden.
  7. Mix cinnamon and sugar in a shallow bowl.
  8. While pancakes are warm, coat lightly with cinnamon sugar.
  9. Serve immediately with syrup or chocolate sauce.
