Ingredients
- 2 large sweet potatoes, peeled and diced
- 2 tbsp olive oil
- 3 cloves garlic, minced
- Zest of 1 lemon
- 2 tbsp fresh lemon juice
- 1 tsp chili flakes (adjust to taste)
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp cornstarch (for extra crispiness)
- 1 tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss diced sweet potatoes with cornstarch until evenly coated.
- Add olive oil, salt, pepper, smoked paprika, and chili flakes. Mix well.
- Spread in a single layer on the prepared baking sheet.
- Roast for 25–30 minutes, flipping halfway through, until golden and crispy.
- During the last 5 minutes, sprinkle minced garlic over the potatoes and return to oven.
- Remove from oven and immediately toss with lemon zest and lemon juice.
- Garnish with fresh parsley and serve warm.
