Description

Tender pork ribs slow-cooked until fall-off-the-bone and coated in a sweet, smoky, sticky barbecue sauce.


Ingredients

  • 2 racks pork ribs (about 22.5 kg)
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup barbecue sauce
  • 1/4 cup ketchup
  • 3 tbsp brown sugar
  • 2 tbsp honey
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp olive oil


Instructions

  1. Preheat the oven to 160°C (325°F).
  2. Remove the membrane from the back of the ribs and pat dry.
  3. Season ribs with salt, pepper, smoked paprika, garlic powder, and onion powder.
  4. Wrap the ribs tightly in foil and place on a baking tray.
  5. Bake for 2 hours until the ribs are tender.
  6. Meanwhile, prepare the sauce by mixing barbecue sauce, ketchup, brown sugar, honey, vinegar, Worcestershire sauce, and olive oil in a saucepan. Simmer for 10 minutes.
  7. Remove ribs from foil, brush generously with the sauce.
  8. Increase oven temperature to 220°C (425°F) or use a grill setting.
  9. Return ribs to the oven and cook uncovered for 15–20 minutes, basting once, until sticky and caramelized.
  10. Rest for 5 minutes before slicing and serving.

Notes

  • For extra smokiness, add a few drops of liquid smoke to the sauce.
  • Ribs can be finished on a barbecue grill instead of the oven.
  • Adjust sweetness by reducing or increasing honey.
