Colorful bell peppers stuffed with juicy steak, rice, and savory seasonings, baked to perfection for a hearty and satisfying meal.
Ingredients
- 4 large bell peppers, tops cut and seeds removed
- 400g beef steak (sirloin or flank), cooked and diced
- 1 cup cooked rice
- 1 tablespoon olive oil
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup tomato sauce
- 1/2 teaspoon paprika
- 1/2 teaspoon oregano
- Salt and black pepper to taste
- 1/2 cup shredded cheese (optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 190°C (375°F).
- Heat olive oil in a skillet over medium heat and sauté onion for 3-4 minutes until softened.
- Add garlic and cook for 1 minute until fragrant.
- Stir in cooked diced steak, rice, tomato sauce, paprika, oregano, salt, and pepper. Mix well and cook for 2-3 minutes.
- Stuff each bell pepper with the steak mixture and place them upright in a baking dish.
- Top with shredded cheese if using.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake an additional 10 minutes until peppers are tender and cheese is melted.
- Garnish with fresh parsley and serve warm.
Notes
- Use different colored bell peppers for a vibrant presentation.
- Swap rice with quinoa or cauliflower rice for variation.
- Pre-cook peppers for 5 minutes if you prefer them extra soft.
- Can be stored in the refrigerator for up to 3 days.
