Description

Colorful bell peppers stuffed with juicy steak, rice, and savory seasonings, baked to perfection for a hearty and satisfying meal.


Ingredients

  • 4 large bell peppers, tops cut and seeds removed
  • 400g beef steak (sirloin or flank), cooked and diced
  • 1 cup cooked rice
  • 1 tablespoon olive oil
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup tomato sauce
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and black pepper to taste
  • 1/2 cup shredded cheese (optional)
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat oven to 190°C (375°F).
  2. Heat olive oil in a skillet over medium heat and sauté onion for 3-4 minutes until softened.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Stir in cooked diced steak, rice, tomato sauce, paprika, oregano, salt, and pepper. Mix well and cook for 2-3 minutes.
  5. Stuff each bell pepper with the steak mixture and place them upright in a baking dish.
  6. Top with shredded cheese if using.
  7. Cover with foil and bake for 25 minutes.
  8. Remove foil and bake an additional 10 minutes until peppers are tender and cheese is melted.
  9. Garnish with fresh parsley and serve warm.

Notes

  • Use different colored bell peppers for a vibrant presentation.
  • Swap rice with quinoa or cauliflower rice for variation.
  • Pre-cook peppers for 5 minutes if you prefer them extra soft.
  • Can be stored in the refrigerator for up to 3 days.
