Description

A gourmet twist on classic grilled cheese, featuring creamy ricotta, savory sun-dried tomatoes, and fresh spinach melted between golden, crispy bread slices.

Ingredients

  • 4 slices sourdough or rustic bread
  • 1/2 cup ricotta cheese
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach leaves
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp butter, softened
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder

Instructions

  1. In a bowl, mix ricotta cheese with black pepper and garlic powder.
  2. Spread butter on one side of each bread slice.
  3. On the unbuttered side of two slices, spread the ricotta mixture evenly.
  4. Top with sun-dried tomatoes, spinach leaves, and shredded mozzarella.
  5. Cover with remaining bread slices, buttered side facing out.
  6. Heat a skillet over medium heat and place sandwiches in the pan.
  7. Cook for 3–4 minutes per side until bread is golden and cheese is melted.
  8. Remove from heat, slice, and serve warm.
