Description

Tiramisu Cold Brew Coffee Cheesecake is a rich and creamy dessert combining bold cold brew coffee flavor with a smooth mascarpone cheesecake filling on a chocolate cookie crust, finished with cocoa dusting.


Ingredients

  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup cold brew coffee (strong)
  • 2 tbsp espresso powder
  • 1 tsp vanilla extract
  • 1/2 cup mascarpone cheese
  • 2 tbsp cocoa powder (for dusting)
  • Chocolate shavings (optional)


Instructions

  1. Preheat oven to 165°C (325°F) and grease a 9-inch springform pan.
  2. Mix chocolate cookie crumbs with melted butter and press into the bottom of the pan. Bake for 8–10 minutes and cool.
  3. Beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing gently.
  5. Blend in sour cream, cold brew coffee, espresso powder, vanilla extract, and mascarpone until smooth.
  6. Pour filling over cooled crust.
  7. Bake for 55–65 minutes until center is slightly set.
  8. Turn off oven and cool inside with door slightly open.
  9. Refrigerate for at least 4 hours or overnight.
  10. Dust with cocoa powder and garnish with chocolate shavings before serving.
