Description

Fun and festive Easter Bunny Cinnamon Rolls made from soft, fluffy dough shaped into adorable bunnies, filled with cinnamon sugar, and topped with sweet icing.

Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 3/4 cup warm milk
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter (melted)
  • 1 teaspoon salt
  • 1 large egg
  • 3 cups all-purpose flour
  • 1/2 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 cup unsalted butter (softened, for filling)
  • 1 cup powdered sugar
  • 2 tablespoons milk (for icing)
  • 1/2 teaspoon vanilla extract
  • Raisins or chocolate chips (for eyes, optional)

Instructions

  1. In a bowl, combine warm milk and yeast. Let sit for 5–10 minutes until foamy.
  2. Add sugar, melted butter, salt, egg, and flour. Mix and knead into a soft dough.
  3. Cover and let rise in a warm place for 1–1.5 hours until doubled in size.
  4. Roll out dough into a rectangle.
  5. Spread softened butter over the dough, then sprinkle with brown sugar and cinnamon.
  6. Roll the dough tightly into a log and slice into strips.
  7. Shape strips into bunny shapes (spiral for body and small loops for ears).
  8. Place on a baking sheet, cover, and let rise for 20–30 minutes.
  9. Bake at 180°C (350°F) for 15–18 minutes until golden.
  10. Mix powdered sugar, milk, and vanilla to make icing.
  11. Drizzle icing over warm rolls and add raisins or chocolate chips for eyes.
  12. Serve warm.

Notes

  • Keep dough soft but not sticky for easy shaping.
