Fun and festive Easter Bunny Cinnamon Rolls made from soft, fluffy dough shaped into adorable bunnies, filled with cinnamon sugar, and topped with sweet icing.
Ingredients
- 2 1/4 teaspoons active dry yeast
- 3/4 cup warm milk
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter (melted)
- 1 teaspoon salt
- 1 large egg
- 3 cups all-purpose flour
- 1/2 cup brown sugar
- 2 teaspoons ground cinnamon
- 1/4 cup unsalted butter (softened, for filling)
- 1 cup powdered sugar
- 2 tablespoons milk (for icing)
- 1/2 teaspoon vanilla extract
- Raisins or chocolate chips (for eyes, optional)
Instructions
- In a bowl, combine warm milk and yeast. Let sit for 5–10 minutes until foamy.
- Add sugar, melted butter, salt, egg, and flour. Mix and knead into a soft dough.
- Cover and let rise in a warm place for 1–1.5 hours until doubled in size.
- Roll out dough into a rectangle.
- Spread softened butter over the dough, then sprinkle with brown sugar and cinnamon.
- Roll the dough tightly into a log and slice into strips.
- Shape strips into bunny shapes (spiral for body and small loops for ears).
- Place on a baking sheet, cover, and let rise for 20–30 minutes.
- Bake at 180°C (350°F) for 15–18 minutes until golden.
- Mix powdered sugar, milk, and vanilla to make icing.
- Drizzle icing over warm rolls and add raisins or chocolate chips for eyes.
- Serve warm.
