Description

Bacon Cheeseburger Chicken Skillet is a hearty one-pan dinner that combines juicy seasoned chicken, crispy beef bacon, melted cheddar cheese, and classic cheeseburger flavors in a creamy skillet meal. It’s a low-carb comfort food favorite that delivers all the taste of a bacon cheeseburger without the bun.

Ingredients

  • 2 lbs boneless skinless chicken breasts, cut into bite-sized pieces
  • 8 slices beef bacon, cooked and crumbled
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup diced dill pickles
  • 2 green onions, sliced
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Season chicken with paprika, garlic powder, onion powder, salt, and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken and cook for 5-6 minutes until browned and cooked through. Remove and set aside.
  4. In the same skillet, cook onion for 3-4 minutes until softened.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Stir in Worcestershire sauce and yellow mustard.
  7. Add cream cheese and heavy cream, stirring until smooth.
  8. Mix in 1 cup of cheddar cheese until melted.
  9. Return chicken to the skillet and stir to coat.
  10. Add half of the crumbled beef bacon and diced pickles.
  11. Sprinkle remaining cheddar cheese over the top.
  12. Cover for 2-3 minutes until the cheese melts.
  13. Garnish with remaining bacon, green onions, and parsley.
  14. Serve hot.

Notes

  • Use sharp cheddar cheese for the best cheeseburger flavor.
  • Turkey bacon can be substituted for beef bacon if preferred.
  • Add sautéed mushrooms for a steakhouse-style variation.
  • Serve over cauliflower rice for a low-carb meal.
  • Store leftovers refrigerated for up to 3 days.
