Description

Baja Fish Tacos are crispy battered fish tacos topped with fresh cabbage slaw and a creamy tangy sauce, delivering a perfect balance of crunch, zest, and flavor.


Ingredients

  • 500 g white fish fillets (cod, tilapia, or haddock)
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cold sparkling water
  • Vegetable oil for frying
  • 8 small corn tortillas
  • 2 cups shredded cabbage
  • 1/4 cup chopped cilantro
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream or yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon hot sauce (optional)
  • Lime wedges for serving


Instructions

  1. Heat oil in a deep pan to 180°C (350°F).
  2. In a bowl, whisk together flour, cornstarch, baking powder, paprika, garlic powder, salt, and pepper.
  3. Gradually add cold sparkling water to create a smooth batter.
  4. Dip fish fillets into the batter and fry until golden and crispy, about 3–4 minutes. Drain on paper towels.
  5. In a small bowl, mix mayonnaise, sour cream, lime juice, and hot sauce to make the sauce.
  6. Combine cabbage and cilantro in a bowl.
  7. Warm tortillas in a pan or oven.
  8. Assemble tacos by placing fried fish on tortillas, topping with cabbage slaw and sauce.
  9. Serve with lime wedges.

Notes

  • Use very cold sparkling water for a crispier batter.
  • You can grill the fish instead of frying for a lighter version.
  • Add sliced avocado or pico de gallo for extra flavor.
  • Serve immediately for best texture.
