Baja Fish Tacos are crispy battered fish tacos topped with fresh cabbage slaw and a creamy tangy sauce, delivering a perfect balance of crunch, zest, and flavor.
Ingredients
- 500 g white fish fillets (cod, tilapia, or haddock)
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup cold sparkling water
- Vegetable oil for frying
- 8 small corn tortillas
- 2 cups shredded cabbage
- 1/4 cup chopped cilantro
- 1/4 cup mayonnaise
- 2 tablespoons sour cream or yogurt
- 1 tablespoon lime juice
- 1 teaspoon hot sauce (optional)
- Lime wedges for serving
Instructions
- Heat oil in a deep pan to 180°C (350°F).
- In a bowl, whisk together flour, cornstarch, baking powder, paprika, garlic powder, salt, and pepper.
- Gradually add cold sparkling water to create a smooth batter.
- Dip fish fillets into the batter and fry until golden and crispy, about 3–4 minutes. Drain on paper towels.
- In a small bowl, mix mayonnaise, sour cream, lime juice, and hot sauce to make the sauce.
- Combine cabbage and cilantro in a bowl.
- Warm tortillas in a pan or oven.
- Assemble tacos by placing fried fish on tortillas, topping with cabbage slaw and sauce.
- Serve with lime wedges.
Notes
- Use very cold sparkling water for a crispier batter.
- You can grill the fish instead of frying for a lighter version.
- Add sliced avocado or pico de gallo for extra flavor.
- Serve immediately for best texture.
