Description

A classic creamy dessert made with a buttery crust, smooth vanilla custard, fresh banana slices, and topped with fluffy whipped cream for a rich and comforting treat.


Ingredients

  • 1 pre-baked 9-inch pie crust
  • 3 ripe bananas, sliced
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 3 large egg yolks
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract (for whipped cream)


Instructions

  1. Arrange sliced bananas evenly over the bottom of the pre-baked pie crust.
  2. In a saucepan, whisk together sugar, cornstarch, and salt.
  3. Gradually whisk in the milk and cook over medium heat, stirring constantly until the mixture thickens.
  4. In a separate bowl, whisk the egg yolks.
  5. Slowly add a small amount of the hot milk mixture into the egg yolks while whisking to temper them.
  6. Pour the egg mixture back into the saucepan and continue cooking for 2–3 minutes until thick and smooth.
  7. Remove from heat and stir in butter and vanilla extract.
  8. Pour the custard over the bananas in the pie crust and smooth the top.
  9. Cover with plastic wrap directly on the surface and refrigerate for at least 3 hours until set.
  10. In a mixing bowl, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  11. Spread or pipe whipped cream over the chilled pie.
  12. Slice and serve chilled.

Notes

  • Use slightly firm bananas so they hold their shape.
  • For extra flavor, add a sprinkle of crushed vanilla wafers on top.
  • Keep the pie refrigerated until ready to serve.
  • The custard can be made a day ahead for convenience.
