Description
A classic creamy dessert made with a buttery crust, smooth vanilla custard, fresh banana slices, and topped with fluffy whipped cream for a rich and comforting treat.
Ingredients
- 1 pre-baked 9-inch pie crust
- 3 ripe bananas, sliced
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 tsp salt
- 3 large egg yolks
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract (for whipped cream)
Instructions
- Arrange sliced bananas evenly over the bottom of the pre-baked pie crust.
- In a saucepan, whisk together sugar, cornstarch, and salt.
- Gradually whisk in the milk and cook over medium heat, stirring constantly until the mixture thickens.
- In a separate bowl, whisk the egg yolks.
- Slowly add a small amount of the hot milk mixture into the egg yolks while whisking to temper them.
- Pour the egg mixture back into the saucepan and continue cooking for 2–3 minutes until thick and smooth.
- Remove from heat and stir in butter and vanilla extract.
- Pour the custard over the bananas in the pie crust and smooth the top.
- Cover with plastic wrap directly on the surface and refrigerate for at least 3 hours until set.
- In a mixing bowl, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
- Spread or pipe whipped cream over the chilled pie.
- Slice and serve chilled.
Notes
- Use slightly firm bananas so they hold their shape.
- For extra flavor, add a sprinkle of crushed vanilla wafers on top.
- Keep the pie refrigerated until ready to serve.
- The custard can be made a day ahead for convenience.
