Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 large lemon, zested and juiced
  • 2 cups cherry tomatoes
  • 8 oz burrata cheese
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh parsley
  • Lemon slices for garnish


Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  2. Pat chicken dry and place in the prepared baking dish.
  3. In a bowl, whisk together olive oil, garlic, oregano, basil, salt, pepper, paprika, lemon zest, and lemon juice.
  4. Pour the marinade over the chicken and coat evenly.
  5. Scatter cherry tomatoes around the chicken.
  6. Sprinkle Parmesan cheese over the top.
  7. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  8. Remove from the oven and let rest for 5 minutes.
  9. Tear burrata into pieces and place over the hot chicken and tomatoes.
  10. Allow the residual heat to slightly soften the burrata.
  11. Garnish with fresh basil, parsley, and lemon slices.
  12. Serve immediately.
