Description

A luxurious dessert combining creamy cheesecake with a caramel custard layer and a crisp brûléed sugar topping for a rich, elegant treat.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup caramel sauce
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar (for brûlée topping)


Instructions

  1. Preheat oven to 325°F (160°C). Grease a springform pan.
  2. Mix graham cracker crumbs with melted butter and press into the bottom of the pan. Bake for 10 minutes, then cool.
  3. In a large bowl, beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in heavy cream, vanilla extract, and salt until smooth.
  6. Pour half of the cheesecake batter over the crust, drizzle caramel sauce, then add remaining batter.
  7. Place the pan in a water bath and bake for 50–60 minutes until set but slightly jiggly in the center.
  8. Turn off oven and let cheesecake cool inside with door slightly open.
  9. Refrigerate for at least 4 hours or overnight.
  10. Before serving, sprinkle granulated sugar evenly on top and torch until caramelized and crisp.

  • Use a water bath to prevent cracks.
  • Chill overnight for best texture.
  • A kitchen torch is best for caramelizing the top.
