Ingredients
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 packet ranch seasoning mix
- 1 cup uncooked long grain rice
- 2 cups beef broth
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup corn kernels
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 2 green onions, sliced
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground beef and diced onion, cooking until beef is browned and onions are softened.
- Drain excess grease if needed.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add taco seasoning and ranch seasoning mix, stirring well.
- Mix in uncooked rice, beef broth, diced tomatoes with green chilies, and corn.
- Bring mixture to a boil, then reduce heat to low.
- Cover and simmer for 18-20 minutes until rice is tender.
- Stir in sour cream and half of the shredded cheese.
- Sprinkle remaining cheese over the top and cover for 2-3 minutes until melted.
- Garnish with green onions and cilantro before serving.
