Description

Cheesy Taco Ranch Rice Skillet is a hearty one-pan dinner loaded with seasoned ground beef, tender rice, creamy ranch flavor, melted cheese, and taco-inspired ingredients for an easy family-friendly meal.


Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 packet ranch seasoning mix
  • 1 cup uncooked long grain rice
  • 2 cups beef broth
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn kernels
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 green onions, sliced
  • Fresh cilantro for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and diced onion, cooking until beef is browned and onions are softened.
  3. Drain excess grease if needed.
  4. Stir in minced garlic and cook for 30 seconds until fragrant.
  5. Add taco seasoning and ranch seasoning mix, stirring well.
  6. Mix in uncooked rice, beef broth, diced tomatoes with green chilies, and corn.
  7. Bring mixture to a boil, then reduce heat to low.
  8. Cover and simmer for 18-20 minutes until rice is tender.
  9. Stir in sour cream and half of the shredded cheese.
  10. Sprinkle remaining cheese over the top and cover for 2-3 minutes until melted.
  11. Garnish with green onions and cilantro before serving.
