Description
Zucchini Rollatini is a light and flavorful Italian-inspired dish made with thin zucchini slices rolled around a creamy ricotta filling, topped with marinara sauce and melted cheese.
Ingredients
- 3 large zucchini, sliced lengthwise into thin strips
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 2 cups marinara sauce
- 2 tablespoons chopped basil or parsley
Instructions
- Preheat oven to 375°F (190°C).
- Brush zucchini slices lightly with olive oil and season with salt and black pepper.
- Grill or roast zucchini slices for 2-3 minutes until slightly tender and flexible.
- In a bowl, combine ricotta cheese, half of the mozzarella cheese, parmesan cheese, egg, garlic, and Italian seasoning.
- Spread a thin layer of marinara sauce in the bottom of a baking dish.
- Spoon ricotta filling onto each zucchini slice and roll tightly.
- Place zucchini rolls seam-side down in the baking dish.
- Top with remaining marinara sauce and mozzarella cheese.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake an additional 10 minutes until cheese is bubbly.
- Garnish with fresh basil or parsley before serving.
Notes
- Use a mandoline slicer for even zucchini strips.
- Pat zucchini dry to reduce excess moisture.
- Serve with salad or garlic bread.
- Fresh ricotta provides the creamiest filling.
- Store leftovers refrigerated for up to 3 days.
