Description

Zucchini Rollatini is a light and flavorful Italian-inspired dish made with thin zucchini slices rolled around a creamy ricotta filling, topped with marinara sauce and melted cheese.


Ingredients

  • 3 large zucchini, sliced lengthwise into thin strips
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 2 cups marinara sauce
  • 2 tablespoons chopped basil or parsley


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brush zucchini slices lightly with olive oil and season with salt and black pepper.
  3. Grill or roast zucchini slices for 2-3 minutes until slightly tender and flexible.
  4. In a bowl, combine ricotta cheese, half of the mozzarella cheese, parmesan cheese, egg, garlic, and Italian seasoning.
  5. Spread a thin layer of marinara sauce in the bottom of a baking dish.
  6. Spoon ricotta filling onto each zucchini slice and roll tightly.
  7. Place zucchini rolls seam-side down in the baking dish.
  8. Top with remaining marinara sauce and mozzarella cheese.
  9. Cover with foil and bake for 25 minutes.
  10. Remove foil and bake an additional 10 minutes until cheese is bubbly.
  11. Garnish with fresh basil or parsley before serving.

  • Use a mandoline slicer for even zucchini strips.
  • Pat zucchini dry to reduce excess moisture.
  • Serve with salad or garlic bread.
  • Fresh ricotta provides the creamiest filling.
