Ingredients
- 8 oz mascarpone cheese, softened

- 1/2 teaspoon almond extract
- 2 cups cherry pie filling or homemade cherry compote
- 1 1/2 cups crushed almond cookies or amaretti cookies
- 1/2 cup sliced almonds, toasted
- 1/2 cup fresh cherries, halved (optional)
- White chocolate curls for garnish (optional)
- Fresh mint leaves for garnish (optional)
Instructions
- In a large bowl, beat the mascarpone cheese until smooth.
- Add the powdered sugar, vanilla extract, and almond extract, mixing until fully combined.
- In a separate bowl, whip the heavy cream to stiff peaks.
- Gently fold the whipped cream into the mascarpone mixture until light and fluffy.
- Place a layer of crushed almond cookies into the bottom of each serving glass.
- Add a layer of mascarpone cream.
- Spoon a layer of cherry pie filling or cherry compote over the cream.
- Repeat the layers, finishing with mascarpone cream.
- Top with additional cherries, toasted sliced almonds, and white chocolate curls if desired.
- Refrigerate for at least 2 hours before serving.
- Garnish with fresh mint leaves just before serving.
