Description

Chicken Lo Mein is a classic Chinese-inspired noodle dish featuring tender chicken, stir-fried vegetables, and soft noodles tossed in a savory soy-based sauce.


Ingredients

  • 250 g lo mein noodles (or spaghetti)
  • 2 chicken breasts, thinly sliced
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 cup cabbage, shredded
  • 1/2 cup carrots, julienned
  • 1/2 cup bell peppers, sliced
  • 3 green onions, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Salt and pepper to taste


Instructions

  1. Cook noodles according to package instructions, drain, and set aside.
  2. Heat 1 tablespoon oil in a wok or large skillet over medium-high heat. Cook chicken until browned and cooked through, then remove and set aside.
  3. Add remaining oil to the pan, then sauté garlic and ginger until fragrant.
  4. Add cabbage, carrots, and bell peppers, stir-frying for 3–4 minutes until slightly tender.
  5. In a bowl, mix soy sauce, oyster sauce, hoisin sauce, sesame oil, and sugar.
  6. Return chicken to the pan and pour in the sauce.
  7. Add cooked noodles and toss everything together.
  8. Stir in cornstarch slurry and cook until sauce thickens slightly.
  9. Add green onions, adjust seasoning, and serve hot.

Notes

  • Use high heat for authentic stir-fry flavor.
  • You can add mushrooms, bean sprouts, or snap peas.
  • Substitute chicken with shrimp or tofu if desired.
  • Use low-sodium soy sauce to control saltiness.
