Ingredients

  • 8 oz fettuccine or penne pasta
  • 1 lb shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup diced tomatoes
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Toss the shrimp with Cajun seasoning until evenly coated.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add the shrimp and cook for 1–2 minutes per side until pink and cooked through. Remove and set aside.
  5. In the same skillet, melt the butter and sauté the minced garlic for about 30 seconds.
  6. Pour in the heavy cream and bring to a gentle simmer.
  7. Stir in the Parmesan cheese, diced tomatoes, paprika, and black pepper.
  8. Add the cooked pasta and toss to coat in the sauce.
  9. Return the shrimp to the skillet and mix gently.
  10. Cook for another 1–2 minutes, garnish with parsley, and serve warm.
