Ingredients

  • 1 lb smoked sausage (beef or chicken, sliced)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 small onion, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1 cup spinach (optional)
  • 2 tablespoons chopped parsley (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced sausage and cook until browned on both sides. Remove and set aside.
  3. In the same skillet, melt butter and sauté onion until softened.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Pour in chicken broth and scrape up any browned bits.
  6. Stir in heavy cream, Parmesan cheese, salt, pepper, paprika, and thyme.
  7. Simmer until the sauce thickens slightly.
  8. Return sausage to the skillet and stir to coat in the sauce.
  9. Add spinach if using and cook until wilted.
  10. Garnish with parsley and serve hot.
