Description

A rich and comforting pasta dish featuring sautéed mushrooms in a creamy garlic parmesan sauce tossed with tender pasta for an easy and flavorful meal.


Ingredients

  • 12 oz (340 g) pasta (fettuccine, penne, or spaghetti)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 12 oz (340 g) mushrooms, sliced (cremini or button)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme or Italian seasoning
  • 1/4 cup pasta cooking water (as needed)
  • 2 tbsp chopped fresh parsley


Instructions

  1. Cook pasta in salted boiling water according to package instructions until al dente. Reserve 1/4 cup of pasta water and drain the pasta.
  2. Heat olive oil and butter in a large skillet over medium heat.
  3. Add chopped onion and cook for 3–4 minutes until softened.
  4. Stir in garlic and cook for 30 seconds until fragrant.
  5. Add sliced mushrooms and cook for 6–8 minutes until browned and tender.
  6. Pour in heavy cream and bring to a gentle simmer.
  7. Stir in Parmesan cheese, salt, pepper, and thyme, mixing until the sauce becomes smooth and creamy.
  8. Add the cooked pasta to the skillet and toss to coat in the sauce.
  9. Add a splash of reserved pasta water if the sauce is too thick.
  10. Cook for another 1–2 minutes until everything is well combined.
  11. Garnish with chopped parsley and extra Parmesan before serving.

Notes

  • Cremini mushrooms provide deeper flavor than white mushrooms.
  • Add grilled chicken or shrimp for extra protein.
  • A squeeze of lemon juice can brighten the sauce.
  • Use freshly grated Parmesan for the best texture and flavor.
