Description
A rich and comforting pasta dish featuring sautéed mushrooms in a creamy garlic parmesan sauce tossed with tender pasta for an easy and flavorful meal.
Ingredients
- 12 oz (340 g) pasta (fettuccine, penne, or spaghetti)
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 12 oz (340 g) mushrooms, sliced (cremini or button)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme or Italian seasoning
- 1/4 cup pasta cooking water (as needed)
- 2 tbsp chopped fresh parsley
Instructions
- Cook pasta in salted boiling water according to package instructions until al dente. Reserve 1/4 cup of pasta water and drain the pasta.
- Heat olive oil and butter in a large skillet over medium heat.
- Add chopped onion and cook for 3–4 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add sliced mushrooms and cook for 6–8 minutes until browned and tender.
- Pour in heavy cream and bring to a gentle simmer.
- Stir in Parmesan cheese, salt, pepper, and thyme, mixing until the sauce becomes smooth and creamy.
- Add the cooked pasta to the skillet and toss to coat in the sauce.
- Add a splash of reserved pasta water if the sauce is too thick.
- Cook for another 1–2 minutes until everything is well combined.
- Garnish with chopped parsley and extra Parmesan before serving.
Notes
- Cremini mushrooms provide deeper flavor than white mushrooms.
- Add grilled chicken or shrimp for extra protein.
- A squeeze of lemon juice can brighten the sauce.
- Use freshly grated Parmesan for the best texture and flavor.
