Ingredients
- 1 1/2 lbs baby potatoes
- 1 1/2 lbs boneless skinless chicken breasts, diced
- 2 tablespoons olive oil
- 1 packet (1 oz) ranch seasoning mix
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1 1/2 cups shredded cheddar cheese
- 2 tablespoons unsalted butter, melted
- 2 tablespoons chopped fresh parsley
- 2 green onions, sliced
- 1/4 cup ranch dressing for drizzling (optional)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Place potatoes in a large pot and cover with water.
- Bring to a boil and cook for 15-18 minutes until fork tender.
- Drain and arrange potatoes on the prepared baking sheet.
- Using the bottom of a glass or potato masher, gently flatten each potato.
- Brush potatoes with melted butter and season lightly with salt.
- Bake for 20 minutes until beginning to crisp.
- Meanwhile, toss diced chicken with olive oil, ranch seasoning, garlic powder, paprika, black pepper, and salt.
- Remove potatoes from the oven and scatter seasoned chicken evenly over and around the potatoes.
- Return to the oven and bake for 18-20 minutes, or until chicken reaches 165°F (74°C).
- Sprinkle cheddar cheese over the chicken and potatoes.
- Bake for an additional 3-5 minutes until the cheese is melted.
- Garnish with parsley and green onions.
- Drizzle with ranch dressing if desired and serve immediately.
