Crispy Ranch Chicken Smash Potatoes is a flavorful comfort-food meal featuring crispy smashed baby potatoes topped with juicy ranch-seasoned chicken, melted cheese, and fresh herbs. This easy sheet-pan dinner combines crunchy potatoes and savory chicken for a satisfying family-friendly meal.


Ingredients

  • 1 1/2 lbs baby potatoes
  • 1 1/2 lbs boneless skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 packet (1 oz) ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 1/2 cups shredded cheddar cheese
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons chopped fresh parsley
  • 2 green onions, sliced
  • 1/4 cup ranch dressing for drizzling (optional)


Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Place potatoes in a large pot and cover with water.
  3. Bring to a boil and cook for 15-18 minutes until fork tender.
  4. Drain and arrange potatoes on the prepared baking sheet.
  5. Using the bottom of a glass or potato masher, gently flatten each potato.
  6. Brush potatoes with melted butter and season lightly with salt.
  7. Bake for 20 minutes until beginning to crisp.
  8. Meanwhile, toss diced chicken with olive oil, ranch seasoning, garlic powder, paprika, black pepper, and salt.
  9. Remove potatoes from the oven and scatter seasoned chicken evenly over and around the potatoes.
  10. Return to the oven and bake for 18-20 minutes, or until chicken reaches 165°F (74°C).
  11. Sprinkle cheddar cheese over the chicken and potatoes.
  12. Bake for an additional 3-5 minutes until the cheese is melted.
  13. Garnish with parsley and green onions.
  14. Drizzle with ranch dressing if desired and serve immediately.

  • Baby Yukon Gold potatoes produce the crispiest smashed potatoes.
  • Do not overcrowd the baking sheet to ensure proper crisping.
