Ingredients

  • 12 slices deli turkey breast
  • 1 large cucumber, cut into thin strips or matchsticks
  • 8 oz cream cheese, softened
  • 2 tablespoons ranch seasoning mix
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup finely diced red bell pepper
  • 2 tablespoons chopped green onions
  • 1 tablespoon chopped fresh parsley
  • 1/4 teaspoon black pepper


Instructions

  1. In a medium bowl, combine cream cheese, ranch seasoning, cheddar cheese, red bell pepper, green onions, parsley, and black pepper.
  2. Mix until smooth and evenly combined.
  3. Lay turkey slices flat on a clean work surface.
  4. Spread a thin layer of the ranch cream cheese mixture over each turkey slice.
  5. Place a few cucumber strips across one end of each slice.
  6. Roll the turkey tightly around the cucumber and filling.
