Description

Easy Loaded Taco Potato Casserole is a hearty and cheesy baked casserole layered with seasoned beef, tender potatoes, taco flavors, and melted cheese for the ultimate comfort food dinner.


Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 1/2 cup water
  • 4 cups diced potatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/4 cup sliced black olives (optional)
  • Fresh cilantro for garnish


Instructions

  1. Preheat oven to 400°F (200°C) and grease a 9×13-inch baking dish.
  2. Toss diced potatoes with olive oil, salt, black pepper, and paprika.
  3. Spread potatoes evenly in the baking dish and bake for 30 minutes until tender.
  4. Meanwhile, cook ground beef in a skillet over medium heat until browned.
  5. Drain excess grease and stir in taco seasoning and water.
  6. Simmer for 3-4 minutes until thickened.
  7. Remove potatoes from the oven and layer taco meat evenly over the potatoes.
  8. Spread sour cream lightly over the top.
  9. Sprinkle shredded cheddar cheese evenly over the casserole.
  10. Return to the oven and bake for another 10-15 minutes until cheese is melted and bubbly.
  11. Top with diced tomatoes, green onions, olives, and cilantro before serving.

  • Use Yukon Gold or russet potatoes for best texture.
  • Add jalapeños for extra spice.
  • Ground turkey or chicken can replace beef.
