Ingredients
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 packet taco seasoning
- 1/2 cup water
- 4 cups diced potatoes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup sliced green onions
- 1/4 cup sliced black olives (optional)
- Fresh cilantro for garnish
Instructions
- Preheat oven to 400°F (200°C) and grease a 9×13-inch baking dish.
- Toss diced potatoes with olive oil, salt, black pepper, and paprika.
- Spread potatoes evenly in the baking dish and bake for 30 minutes until tender.
- Meanwhile, cook ground beef in a skillet over medium heat until browned.
- Drain excess grease and stir in taco seasoning and water.
- Simmer for 3-4 minutes until thickened.
- Remove potatoes from the oven and layer taco meat evenly over the potatoes.
- Spread sour cream lightly over the top.
- Sprinkle shredded cheddar cheese evenly over the casserole.
- Return to the oven and bake for another 10-15 minutes until cheese is melted and bubbly.
- Top with diced tomatoes, green onions, olives, and cilantro before serving.
Notes
- Use Yukon Gold or russet potatoes for best texture.
- Add jalapeños for extra spice.
- Ground turkey or chicken can replace beef.
- Serve with salsa or guacamole.
