Description

A smooth and creamy Bavarian cream dessert made with vanilla custard, lightened with whipped cream, and served chilled with fresh mixed berries for a refreshing and elegant treat.

Ingredients

  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 3 egg yolks
  • 1 tsp vanilla extract
  • 2 tsp unflavored gelatin
  • 2 tbsp cold water
  • 1 cup heavy whipping cream (for folding)
  • 1 cup strawberries, sliced
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1 tbsp powdered sugar (optional, for berries)

Instructions

  1. In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
  2. In a saucepan, heat milk, cream, and half of the sugar until just steaming.
  3. In a bowl, whisk egg yolks with remaining sugar until pale.
  4. Slowly pour hot milk mixture into yolks while whisking to temper.
  5. Return mixture to saucepan and cook over low heat, stirring constantly until thickened (do not boil).
  6. Remove from heat and stir in bloomed gelatin until fully dissolved.
  7. Add vanilla extract and let mixture cool to room temperature.
  8. Whip the remaining heavy cream to soft peaks.
  9. Gently fold whipped cream into the cooled custard.
  10. Pour into serving glasses or molds and refrigerate for at least 4 hours until set.
  11. Toss berries with powdered sugar if desired and spoon over the set cream before serving.

Notes

  • Do not boil the custard to avoid curdling the eggs.
  • Ensure gelatin is fully dissolved for a smooth texture.
  • Can be made a day in advance and kept chilled.
  • Use any seasonal berries or fruit of choice.
  • For extra flavor, add a splash of berry syrup or citrus zest.
