Description
A smooth and creamy Bavarian cream dessert made with vanilla custard, lightened with whipped cream, and served chilled with fresh mixed berries for a refreshing and elegant treat.
Ingredients
- 1 cup whole milk
- 1/2 cup heavy cream
- 1/2 cup granulated sugar
- 3 egg yolks
- 1 tsp vanilla extract
- 2 tsp unflavored gelatin
- 2 tbsp cold water
- 1 cup heavy whipping cream (for folding)
- 1 cup strawberries, sliced
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1 tbsp powdered sugar (optional, for berries)
Instructions
- In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
- In a saucepan, heat milk, cream, and half of the sugar until just steaming.
- In a bowl, whisk egg yolks with remaining sugar until pale.
- Slowly pour hot milk mixture into yolks while whisking to temper.
- Return mixture to saucepan and cook over low heat, stirring constantly until thickened (do not boil).
- Remove from heat and stir in bloomed gelatin until fully dissolved.
- Add vanilla extract and let mixture cool to room temperature.
- Whip the remaining heavy cream to soft peaks.
- Gently fold whipped cream into the cooled custard.
- Pour into serving glasses or molds and refrigerate for at least 4 hours until set.
- Toss berries with powdered sugar if desired and spoon over the set cream before serving.
Notes
- Do not boil the custard to avoid curdling the eggs.
- Ensure gelatin is fully dissolved for a smooth texture.
- Can be made a day in advance and kept chilled.
- Use any seasonal berries or fruit of choice.
- For extra flavor, add a splash of berry syrup or citrus zest.
