Ingredients
- 1 1/2 lbs sirloin steak, cut into bite-sized pieces
- 1 1/2 lbs baby Yukon Gold potatoes, halved or quartered
- 2 tablespoons olive oil
- 5 tablespoons unsalted butter
- 5 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon lemon juice (optional)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
- Add potatoes and season with half of the paprika, thyme, rosemary, salt, and pepper.
- Cook for 12-15 minutes, stirring occasionally, until potatoes are golden brown and tender.
- Remove potatoes from the skillet and set aside.
- Toss steak pieces with the remaining seasonings.
- Add the remaining olive oil to the skillet and sear steak bites for 2-3 minutes per side until browned and cooked to desired doneness.
- Reduce heat to medium and add butter.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Return potatoes to the skillet and toss with the steak and garlic butter sauce.
- Drizzle with lemon juice if desired and mix gently.
- Garnish with fresh parsley and serve immediately.
