Garlic Parmesan Roasted Vegetable Medley is a colorful and flavorful side dish featuring perfectly roasted vegetables tossed with garlic, herbs, olive oil, and parmesan cheese until golden and tender.


Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 2 carrots, sliced
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, cut into chunks
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat oven to 425°F (220°C).
  2. Line a large baking sheet with parchment paper.
  3. Place broccoli, cauliflower, carrots, zucchini, bell peppers, and red onion in a large bowl.
  4. Add olive oil, garlic, Italian seasoning, oregano, salt, and black pepper.
  5. Toss until all vegetables are evenly coated.
  6. Spread vegetables in a single layer on the prepared baking sheet.
  7. Roast for 20-25 minutes, stirring halfway through, until vegetables are tender and lightly caramelized.
  8. Remove from the oven and immediately sprinkle with parmesan cheese.
  9. Toss gently to combine and allow the residual heat to melt the cheese.
  10. Garnish with fresh parsley and serve warm.
