Ingredients
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 2 carrots, sliced
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, cut into chunks
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 425°F (220°C).
- Line a large baking sheet with parchment paper.
- Place broccoli, cauliflower, carrots, zucchini, bell peppers, and red onion in a large bowl.
- Add olive oil, garlic, Italian seasoning, oregano, salt, and black pepper.
- Toss until all vegetables are evenly coated.
- Spread vegetables in a single layer on the prepared baking sheet.
- Roast for 20-25 minutes, stirring halfway through, until vegetables are tender and lightly caramelized.
- Remove from the oven and immediately sprinkle with parmesan cheese.
- Toss gently to combine and allow the residual heat to melt the cheese.
- Garnish with fresh parsley and serve warm.
