Description

A warm and crispy panini filled with sliced turkey, basil pesto, melted cheese, and fresh tomatoes pressed between golden toasted bread for a flavorful and satisfying sandwich.


Ingredients

  • 4 slices ciabatta bread or sourdough bread
  • 6 oz sliced turkey breast
  • 3 tbsp basil pesto
  • 4 slices mozzarella cheese
  • 1 medium tomato, sliced
  • 1 tbsp butter or olive oil
  • 1/4 tsp black pepper
  • Optional: a handful of fresh spinach or arugula


Instructions

  1. Preheat a panini press or skillet over medium heat.
  2. Spread basil pesto evenly on the inside of each slice of bread.
  3. Layer turkey slices, mozzarella cheese, tomato slices, and spinach or arugula if using on two slices of bread.
  4. Sprinkle with black pepper and close the sandwiches with the remaining bread slices.
  5. Lightly spread butter or brush olive oil on the outside of the bread.
  6. Place the sandwiches in the panini press and cook for 4–6 minutes until the bread is golden and the cheese is melted.
  7. If using a skillet, press the sandwich with a spatula and flip halfway through cooking.
  8. Remove from heat, slice in half, and serve warm.

Notes

  • Ciabatta bread gives the best crispy texture, but sourdough or focaccia also works well.
  • Add roasted red peppers for extra flavor.
  • Use smoked turkey for a deeper taste.
  • Serve with soup, salad, or chips for a complete meal.
