Ingredients

  • 4 ripe peaches, halved and pitted
  • 1 tablespoon olive oil
  • 8 oz burrata cheese
  • 5 cups arugula or mixed greens
  • 1/4 cup fresh basil leaves
  • 1/4 cup toasted pecans or walnuts
  • 1/4 cup balsamic glaze
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat a grill or grill pan to medium-high heat.
  2. Brush peach halves lightly with olive oil.
  3. Grill peaches cut-side down for 3-4 minutes until grill marks appear and peaches soften slightly.
  4. Remove peaches and allow them to cool for a few minutes before slicing.
  5. Arrange arugula or mixed greens on a serving platter.
  6. Tear burrata into pieces and distribute over the greens.
  7. Top with grilled peach slices and fresh basil leaves.
  8. Sprinkle toasted pecans or walnuts over the salad.
  9. Whisk together extra virgin olive oil, honey, lemon juice, salt, and pepper.
  10. Drizzle the dressing over the salad.
  11. Finish with balsamic glaze.
  12. Serve immediately.
