Ingredients
- 2 cups corn kernels (fresh, canned, or frozen)
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1/3 cup honey
- 1/4 cup sugar
- 1 cup milk
- 2 large eggs
- 1/4 cup melted butter
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Preheat the oven to 180°C (350°F) and grease a baking dish.
- In a large bowl, mix cornmeal, flour, baking powder, salt, and sugar.
- In another bowl, whisk together milk, eggs, melted butter, and honey.
- Combine wet and dry ingredients, stirring until just mixed.
- Fold in corn kernels and cheese if using.
- Pour the batter into the prepared baking dish.
- Bake for 35–40 minutes until golden and set in the center.
- Drizzle additional honey on top before serving if desired.
