Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 flatbreads or naan breads
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 3 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup diced red bell pepper
- 1/4 cup thinly sliced red onion
- 2 tablespoons chopped fresh cilantro
- 1/4 cup sour cream
- 1 tablespoon mayonnaise
- 1 teaspoon lime juice (for sauce)
Instructions
- Preheat oven to 425°F (220°C).
- In a bowl, whisk together olive oil, honey, lime juice, lime zest, garlic, chili powder, paprika, salt, and black pepper.
- Add shrimp and toss to coat. Marinate for 10 minutes.
- Heat a skillet over medium-high heat and cook shrimp for 2 minutes per side until just pink. Remove from heat.
- Place flatbreads on a baking sheet.
- Sprinkle mozzarella and Monterey Jack cheese evenly over the flatbreads.
- Top with cooked shrimp, red bell pepper, and red onion.
- Bake for 8-10 minutes until the cheese is melted and bubbly.
- Meanwhile, mix sour cream, mayonnaise, and lime juice to make the sauce.
- Remove flatbreads from the oven and drizzle with the lime sauce.
- Garnish with fresh cilantro.
- Slice and serve immediately.

- Do not overcook the shrimp before baking to keep them tender.
- Naan bread makes an excellent substitute for flatbread.
- Add sliced jalapeños for extra heat.
