Description

Honey Lime Shrimp Flatbreads are sweet, tangy, and savory flatbreads topped with juicy honey-lime shrimp, melted mozzarella, fresh vegetables, and a drizzle of creamy lime sauce. Perfect for a quick lunch, light dinner, or party appetizer.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 flatbreads or naan breads
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup diced red bell pepper
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons chopped fresh cilantro
  • 1/4 cup sour cream
  • 1 tablespoon mayonnaise
  • 1 teaspoon lime juice (for sauce)


Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, whisk together olive oil, honey, lime juice, lime zest, garlic, chili powder, paprika, salt, and black pepper.
  3. Add shrimp and toss to coat. Marinate for 10 minutes.
  4. Heat a skillet over medium-high heat and cook shrimp for 2 minutes per side until just pink. Remove from heat.
  5. Place flatbreads on a baking sheet.
  6. Sprinkle mozzarella and Monterey Jack cheese evenly over the flatbreads.
  7. Top with cooked shrimp, red bell pepper, and red onion.
  8. Bake for 8-10 minutes until the cheese is melted and bubbly.
  9. Meanwhile, mix sour cream, mayonnaise, and lime juice to make the sauce.
  10. Remove flatbreads from the oven and drizzle with the lime sauce.
  11. Garnish with fresh cilantro.
  12. Slice and serve immediately.

Notes

  • Do not overcook the shrimp before baking to keep them tender.
  • Naan bread makes an excellent substitute for flatbread.
  • Add sliced jalapeños for extra heat.
  • Fresh lime juice provides the brightest flavor.
