Description

Ingredients
- 8 lamb chops
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tsp fresh thyme or 1/2 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tbsp lemon juice
- 1 tbsp butter (optional, for finishing)
Instructions
- Pat lamb chops dry with paper towels.
- In a bowl, mix olive oil, garlic, rosemary, thyme, salt, pepper, paprika, and lemon juice.
- Rub the marinade over the lamb chops and let rest for at least 15–30 minutes.
- Heat a large skillet over medium-high heat.
- Add a little olive oil and place the lamb chops in the skillet.
- Cook for 3–4 minutes on each side for medium-rare, or longer to desired doneness.
- Add butter during the last minute and spoon over the chops for extra flavor.
- Remove from heat and let rest for 5 minutes before serving.
- Serve hot with your favorite sides.
Notes
- Do not overcrowd the pan; cook in batches if needed.
- Use a meat thermometer for accuracy (135°F/57°C for medium-rare).
- Letting the meat rest helps retain juices.
- Pairs well with roasted vegetables, potatoes, or salad.
- Can be marinated longer (up to 4 hours) for deeper flavor.
