Ingredients
- 1 1/2 lbs salmon fillets, skin removed
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried dill
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 pita breads
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1 cup shredded lettuce
- 1/2 cup plain Greek yogurt
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon lemon juice (for sauce)
- 1/4 teaspoon salt (for sauce)
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together olive oil, lemon zest, lemon juice, garlic, oregano, dill, paprika, salt, and black pepper.
- Place salmon on a lined baking sheet and brush with the lemon herb mixture.
- Bake for 12-15 minutes, or until the salmon flakes easily with a fork.
- Allow salmon to cool slightly, then break into large flakes.
- In a bowl, combine Greek yogurt, fresh dill, parsley, lemon juice, and salt to make the herb sauce.
- Warm the pita breads.
- Fill each pita with shredded lettuce, cucumber, tomatoes, and red onion.
- Add flaked salmon evenly among the pitas.
- Drizzle generously with the herb yogurt sauce.
- Serve immediately.
