Ingredients

  • 1 lb breakfast sausage or beef sausage
  • 1 tablespoon olive oil
  • 1 bag (20 oz) frozen hash browns
  • 8 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 2 green onions, sliced


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat.
  3. Cook sausage until browned and fully cooked, breaking it apart as it cooks.
  4. Spread hash browns evenly into the prepared baking dish.
  5. Layer cooked sausage, diced bell peppers, onions, and 1 cup of cheddar cheese over the hash browns.
  6. In a large bowl, whisk together eggs, milk, salt, black pepper, garlic powder, and paprika.
  7. Pour the egg mixture evenly over the casserole.
  8. Sprinkle remaining cheddar cheese on top.
  9. Bake uncovered for 35-40 minutes until eggs are set and the top is golden.
  10. Garnish with sliced green onions before serving.
