Mango Coconut Cheesecake Lush is a refreshing no-bake layered dessert featuring a buttery graham cracker crust, creamy coconut cheesecake filling, luscious mango pudding, fluffy whipped topping, and toasted coconut. Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 1 container (8 oz) whipped topping, divided
  • 2 packages (3.4 oz each) instant vanilla pudding mix
  • 3 cups cold milk
  • 1 cup mango puree
  • 1 cup diced ripe mango
  • 1 cup sweetened shredded coconut, toasted
  • 2 tablespoons white chocolate shavings (optional)
  • Fresh mint leaves for garnish (optional)


Instructions

  1. Combine the graham cracker crumbs and melted butter until evenly moistened.
  2. Press the mixture firmly into the bottom of a 9×13-inch baking dish and refrigerate for 15 minutes.
  3. Beat the softened cream cheese until smooth.
  4. Add the powdered sugar, vanilla extract, and coconut extract, mixing until creamy.
  5. Fold in half of the whipped topping and 1/2 cup of the toasted coconut.
  6. Spread the cheesecake mixture evenly over the chilled crust.
  7. Whisk together the vanilla pudding mix, cold milk, and mango puree until thickened.
  8. Fold in the diced mango.
  9. Spread the mango pudding layer over the cheesecake layer.
  10. Top with the remaining whipped topping.
  11. Sprinkle with the remaining toasted coconut.
  12. Garnish with white chocolate shavings and fresh mint if desired.
  13. Refrigerate for at least 4 hours, preferably overnight, before serving.
