Ingredients
- 1 1/2 lbs boneless skinless chicken breasts, diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups cooked rice or quinoa
- 2 large cucumbers, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1 cup plain Greek yogurt
- 1 tablespoon lemon juice (for sauce)
- 1 clove garlic, minced (for sauce)
- 1 tablespoon olive oil (for sauce)
Instructions
- In a bowl, combine chicken, olive oil, garlic, lemon juice, oregano, paprika, salt, and black pepper.
- Marinate for at least 15 minutes.
- Heat a skillet or grill pan over medium-high heat.
- Cook chicken for 6-8 minutes until golden brown and fully cooked.
- In a small bowl, whisk together Greek yogurt, lemon juice, garlic, and olive oil to make the sauce.
- Divide cooked rice or quinoa among serving bowls.
- Top with cucumbers, tomatoes, red onion, and cooked chicken.
- Sprinkle feta cheese, parsley, and mint over each bowl.
- Drizzle with the yogurt sauce.
- Serve immediately or refrigerate for meal prep.
