Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups cooked rice or quinoa
  • 2 large cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice (for sauce)
  • 1 clove garlic, minced (for sauce)
  • 1 tablespoon olive oil (for sauce)


Instructions

  1. In a bowl, combine chicken, olive oil, garlic, lemon juice, oregano, paprika, salt, and black pepper.
  2. Marinate for at least 15 minutes.
  3. Heat a skillet or grill pan over medium-high heat.
  4. Cook chicken for 6-8 minutes until golden brown and fully cooked.
  5. In a small bowl, whisk together Greek yogurt, lemon juice, garlic, and olive oil to make the sauce.
  6. Divide cooked rice or quinoa among serving bowls.
  7. Top with cucumbers, tomatoes, red onion, and cooked chicken.
  8. Sprinkle feta cheese, parsley, and mint over each bowl.
  9. Drizzle with the yogurt sauce.
  10. Serve immediately or refrigerate for meal prep.
