Description

Million Dollar Beef Rice Casserole is an ultra-creamy, cheesy comfort food casserole made with seasoned ground beef, fluffy rice, rich cream cheese, sour cream, and plenty of melted cheese baked until golden and bubbly.


Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups cooked white rice
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 2 green onions, sliced for garnish


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add onion and cook for 3-4 minutes until softened.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  6. Season with Worcestershire sauce, garlic powder, onion powder, salt, and black pepper.
  7. In a large mixing bowl, combine cream cheese, sour cream, cream of mushroom soup, 1 1/2 cups cheddar cheese, and Parmesan cheese.
  8. Mix until smooth and creamy.
  9. Stir in the cooked beef mixture and cooked rice.
  10. Transfer the mixture to the prepared baking dish and spread evenly.
  11. Top with the remaining cheddar cheese.
  12. Bake uncovered for 25-30 minutes until hot and bubbly.
  13. Let rest for 5 minutes before serving.
  14. Garnish with parsley and green onions.
