Ingredients
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup melted butter
- 1 cup creamy peanut butter
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy whipping cream
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream (for chocolate layer)
- 2 tablespoons powdered sugar (for whipped cream)
- Chocolate shavings or peanut butter chips for garnish (optional)
Instructions
- Mix chocolate cookie crumbs with melted butter and press into a pie dish to form the crust. Chill for 20 minutes.
- In a bowl, beat cream cheese, peanut butter, powdered sugar, and vanilla until smooth.
- Whip 1 1/2 cups heavy cream with 2 tablespoons powdered sugar until stiff peaks form.
- Fold half of the whipped cream into the peanut butter mixture.
- Spread the peanut butter filling evenly over the chilled crust.
- Heat 1/2 cup heavy cream until hot, then pour over chocolate chips. Let sit, then stir until smooth to make chocolate ganache.
- Let ganache cool slightly, then spread over the peanut butter layer.
- Top with remaining whipped cream.
- Refrigerate for at least 4 hours or until set.
- Garnish with chocolate shavings or peanut butter chips before serving.
