Description

One-Pot Chicken & Rice is a comforting, flavorful meal made with tender chicken, seasoned rice, and simple spices, all cooked together in one pot for an easy and satisfying dinner.


Ingredients

  • 4 chicken thighs or breasts
  • 2 tbsp olive oil
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp turmeric (optional)
  • 1/2 tsp dried thyme or oregano
  • 1/2 cup carrots, diced
  • 1/2 cup peas
  • 1 tbsp chopped fresh parsley (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken with salt, pepper, and paprika, then sear for 4–5 minutes per side until golden. Remove and set aside.
  3. In the same pot, sauté onion and garlic until softened and fragrant.
  4. Add rice and stir for 1–2 minutes to lightly toast.
  5. Pour in chicken broth and add carrots, peas, turmeric, and dried herbs. Stir well.
  6. Place the chicken back on top of the rice mixture.
  7. Cover and simmer on low heat for 20–25 minutes until rice is tender and chicken is fully cooked.
  8. Remove from heat and let rest for 5 minutes.
  9. Garnish with fresh parsley and serve warm.

Notes

  • Use bone-in chicken for extra flavor.
  • Avoid lifting the lid while cooking to ensure perfectly steamed rice.
  • You can substitute vegetables based on preference.
  • Add a squeeze of lemon before serving for freshness.
