Description
One-Pot Chicken & Rice is a comforting, flavorful meal made with tender chicken, seasoned rice, and simple spices, all cooked together in one pot for an easy and satisfying dinner.
Ingredients
- 4 chicken thighs or breasts
- 2 tbsp olive oil
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp turmeric (optional)
- 1/2 tsp dried thyme or oregano
- 1/2 cup carrots, diced
- 1/2 cup peas
- 1 tbsp chopped fresh parsley (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Season chicken with salt, pepper, and paprika, then sear for 4–5 minutes per side until golden. Remove and set aside.
- In the same pot, sauté onion and garlic until softened and fragrant.
- Add rice and stir for 1–2 minutes to lightly toast.
- Pour in chicken broth and add carrots, peas, turmeric, and dried herbs. Stir well.
- Place the chicken back on top of the rice mixture.
- Cover and simmer on low heat for 20–25 minutes until rice is tender and chicken is fully cooked.
- Remove from heat and let rest for 5 minutes.
- Garnish with fresh parsley and serve warm.
Notes
- Use bone-in chicken for extra flavor.
- Avoid lifting the lid while cooking to ensure perfectly steamed rice.
- You can substitute vegetables based on preference.
- Add a squeeze of lemon before serving for freshness.
