Description

One Pot Creamy Chicken Rigatoni is a rich and comforting pasta dish made with tender chicken, rigatoni pasta, garlic, parmesan cheese, and a creamy sauce all cooked together in one pot for an easy dinner.


Ingredients

  • 1 lb boneless skinless chicken breasts, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 12 oz rigatoni pasta
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1/2 teaspoon paprika
  • 2 cups fresh spinach (optional)
  • 2 tablespoons chopped parsley for garnish


Instructions

  1. Season diced chicken with salt, black pepper, Italian seasoning, and paprika.
  2. Heat olive oil in a large pot or deep skillet over medium-high heat.
  3. Add chicken and cook for 5-6 minutes until browned and fully cooked.
  4. Stir in minced garlic and cook for 30 seconds until fragrant.
  5. Add rigatoni pasta and chicken broth to the pot.
  6. Bring to a boil, then reduce heat to medium-low.
  7. Cover and simmer for 12-15 minutes, stirring occasionally, until pasta is tender.
  8. Pour in heavy cream and stir well.
  9. Mix in parmesan cheese until melted and creamy.
  10. Add spinach and cook until wilted if using.
  11. Garnish with chopped parsley and serve hot.

Notes

  • Freshly grated parmesan creates the smoothest sauce.
  • Add extra broth if the pasta absorbs too much liquid.
  • Use rotisserie chicken for faster preparation.
