Description

Parmesan Crusted Cod & Veggies is a wholesome sheet-pan dinner featuring flaky cod fillets coated in a crispy Parmesan herb crust and roasted alongside colorful vegetables. This easy one-pan meal delivers a perfect balance of protein, vegetables, and savory flavor for a healthy weeknight dinner.


Ingredients

  • 4 cod fillets (about 6 oz each)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, chopped
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons chopped fresh parsley
  • Lemon wedges for serving


Instructions

  1. Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. In a bowl, toss zucchini, yellow squash, bell pepper, broccoli, and cherry tomatoes with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  3. Spread vegetables evenly on one side of the baking sheet.
  4. In a small bowl, combine Parmesan cheese, panko breadcrumbs, garlic, Italian seasoning, paprika, remaining salt, and remaining black pepper.
  5. Pat the cod fillets dry and place them on the other side of the baking sheet.
  6. Brush cod lightly with the remaining olive oil and lemon juice.
  7. Press the Parmesan mixture firmly onto the top of each fillet.
  8. Roast for 15-18 minutes, or until the cod flakes easily with a fork and the vegetables are tender.
  9. If desired, broil for 1-2 minutes to achieve a crispier crust.
  10. Remove from the oven and sprinkle with lemon zest and fresh parsley.
  11. Serve immediately with lemon wedges.

  • Fresh cod provides the best texture, but frozen cod can be used if fully thawed.
  • Do not overcook the fish, as cod can dry out quickly.
