Ingredients
- 4 cod fillets (about 6 oz each)
- 1/2 cup grated Parmesan cheese
- 1/2 cup panko breadcrumbs
- 2 tablespoons olive oil, divided
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red bell pepper, chopped
- 1 cup broccoli florets
- 1 cup cherry tomatoes
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons chopped fresh parsley
- Lemon wedges for serving
Instructions
- Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- In a bowl, toss zucchini, yellow squash, bell pepper, broccoli, and cherry tomatoes with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Spread vegetables evenly on one side of the baking sheet.
- In a small bowl, combine Parmesan cheese, panko breadcrumbs, garlic, Italian seasoning, paprika, remaining salt, and remaining black pepper.
- Pat the cod fillets dry and place them on the other side of the baking sheet.
- Brush cod lightly with the remaining olive oil and lemon juice.
- Press the Parmesan mixture firmly onto the top of each fillet.
- Roast for 15-18 minutes, or until the cod flakes easily with a fork and the vegetables are tender.
- If desired, broil for 1-2 minutes to achieve a crispier crust.
- Remove from the oven and sprinkle with lemon zest and fresh parsley.
- Serve immediately with lemon wedges.
