Description

Peach Cobbler Cheesecake Pops are creamy no-bake frozen treats featuring a rich peach cheesecake filling coated in buttery cinnamon graham cracker crumbs. These handheld desserts combine the flavors of classic peach cobbler and cheesecake into a fun, refreshing treat perfect for summer gatherings.

Ingredients

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 cup finely diced peaches (fresh or well-drained canned)
  • 1 cup whipped topping
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground cinnamon (for coating)
  • 12 popsicle sticks
  • White chocolate, melted for drizzling (optional)

Instructions

  1. In a large bowl, beat the cream cheese until smooth and creamy.
  2. Add the powdered sugar, vanilla extract, and cinnamon, mixing until fully combined.
  3. Fold in the diced peaches and whipped topping until evenly incorporated.
  4. Divide the mixture into 12 equal portions and shape into oval or round pops.
  5. Insert a popsicle stick into each pop and place them on a parchment-lined tray.
  6. Freeze for at least 2 hours, or until firm.
  7. Mix the graham cracker crumbs, melted butter, brown sugar, and cinnamon until evenly coated.
  8. Roll each frozen cheesecake pop in the graham cracker mixture, pressing gently so it adheres.
  9. Drizzle with melted white chocolate if desired.
  10. Freeze for an additional 15-20 minutes before serving.

Notes

  • Drain canned peaches thoroughly to prevent the filling from becoming watery.
  • Fresh ripe peaches provide the best flavor during peach season.
  • Freeze the pops completely before coating for easier handling.
  • Wrap each pop individually and store in the freezer for up to 2 weeks.
  • Serve slightly softened for the creamiest texture.
