Ingredients
- 500g carrots, peeled and cut into sticks or rounds
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 tablespoons honey
- 1/2 teaspoon chili flakes (or more to taste)
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 1 teaspoon fresh thyme or parsley, chopped (optional for garnish)
Instructions
- Preheat oven to 200°C (400°F).
- Toss carrots with olive oil, salt, pepper, and paprika.
- Spread carrots evenly on a baking sheet in a single layer.
- Roast for 20–25 minutes, flipping halfway, until tender and slightly caramelized.
- In a small saucepan, melt butter over medium heat.
- Add honey and chili flakes, stirring until combined and slightly bubbly.
- Remove carrots from oven and drizzle with hot honey butter.
- Toss to coat evenly and return to oven for 3–5 minutes.
- Garnish with fresh herbs if desired and serve warm.
