Roasted Veggie & Whipped Feta Plates are a colorful Mediterranean-inspired dish featuring caramelized roasted vegetables served over creamy whipped feta and finished with fresh herbs and a drizzle of olive oil.
Ingredients
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, cut into wedges
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 oz feta cheese
- 1/2 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon honey (optional)
- 2 tablespoons chopped fresh parsley
- 1 tablespoon fresh dill, chopped
- Extra virgin olive oil for drizzling
Instructions
- Preheat oven to 425°F (220°C).
- Place zucchini, squash, bell peppers, onion, and broccoli on a large baking sheet.
- Drizzle with olive oil and season with garlic powder, oregano, salt, and black pepper.
- Toss until evenly coated and spread into a single layer.
- Roast for 25-30 minutes, stirring halfway through, until vegetables are tender and lightly caramelized.
- Meanwhile, combine feta cheese, Greek yogurt, lemon juice, and honey (if using) in a food processor.
- Blend until smooth and creamy.
- Spread a generous layer of whipped feta onto serving plates.
- Top with roasted vegetables.
- Garnish with parsley and dill.
- Finish with a drizzle of olive oil and serve warm.
