Ingredients

  • 1 pre-baked pie crust
  • 2 cups shredded sweetened coconut
  • 1 cup caramel sauce
  • 1/2 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips
  • 2 tablespoons butter
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 180°C (350°F).
  2. Spread shredded coconut on a baking sheet and toast for 5–8 minutes until golden, stirring occasionally.
  3. In a saucepan, combine caramel sauce, heavy cream, butter, and salt. Heat gently until smooth.
  4. Stir in toasted coconut and vanilla extract until well coated.
  5. Pour the coconut caramel mixture into the pre-baked pie crust and spread evenly.
  6. Let the pie cool and set for about 1 hour.
  7. Melt chocolate chips in a microwave or double boiler until smooth.
  8. Drizzle melted chocolate over the pie in a striped pattern.
  9. Refrigerate for at least 30 minutes before slicing and serving.
